1. Slice the onion into thin strips.2. Slice the green pepper into ¼ inch strips.
3. Sauté the onion and green pepper in the butter for 3 to 4 minutes.
4. Remove ½ of the onion pepper mixture and put aside in a covered bowl.
5. Add the beer to the remaining onions and green pepper in the saucepan and bring to a low simmer.
6. Add the brats to the pan and simmer on low heat for approximately 20 minutes.
7. Transfer the brats to your preheated grill and cook on low heat for 4 to 6 minutes until they are lightly browned. Use tongs to turn the brats as they cook so that you don’t break the skin of the sausages — you want to keep all of the juicy flavor inside!
8. Serve the brats on fresh French bread cut into sections and top with the onion-pepper mixture and spicy mustard.
