- Season the beef with salt, pepper and thyme.
- Grease a large skillet and heat over medium to high heat.
- Place the beef of your choosing onto the skillet and cook until desired doneness, turning once.
- Remove the beef when done and keep warm.
- In the same skillet, add the sliced onions and heat until tender.
- Once tender, add in the beef stock, wine and cherries. Reduce the heat to just medium and cook for about 10 minutes. Add in the butter and heat for one more minute.
- Place beef onto a place and serve cherry sauce overtop.
