1. Heat oven to 375 degrees. Spray cooking sheets with cooking spray.
2. In large mixing bowl, cream together butter and sugar. Add vanilla, egg, and pumpkin. In separate bowl blend together flour, baking powder, baking soda, cinnamon and salt. Stir into pumpkin mixture until well-blended.
3. Fold in cranberries, orange zest and walnuts. Drop by teaspoonfuls onto cookie sheet.
4. Bake for 10 to 12 minutes or until golden brown.*
*For special occasions, allow cookies to cool slightly then dip top of cookies into a powdered sugar glaze (about 1 cup of powdered sugar to 2-3 tablespoons of milk a drop or two of extract – my favorite is coconut or almond!)
