1. Season lamb by brushing or rubbing 1 tablespoon of chipotle pepper on each side of chops. Sprinkle with salt, pepper and 2 tablespoons rosemary. Let rest 15 minutes on counter to bring to room temperature.2. Preheat grill to medium heat (375-425º.) Add raspberries to a small mixing bowl and mash with a fork. Add yogurt, lemon juice, remaining chipotle pepper, 1 tablespoon rosemary, and pinch of salt to mashed raspberries. Stir to combine and set aside.
3. Place chops on grill for 2 1/2 to 3 minutes. Flip and grill an additional 3 minutes for medium rare (125-135º), or 3 1/2 minutes for medium doneness (135-145º). Remove and serve with yogurt sauce.
